At the Japanese-style ramen specialty shop "Yume-kan" in Kashiwa City, Chiba Prefecture, they use three machines: the DX-88P, DX-50, and DX-40. Cutting 5 kg of green onions by hand each day is quite a challenge, but by using the DX-50, they were able to improve the quality of the green onions and achieve consistent cutting times. Since they operate with the minimum number of staff, they have received positive feedback for significantly reducing preparation time. The machine is very effective for cutting white-haired green onions, slicing long green onions, and finely chopping cabbage for gyoza. They also mentioned that the increase in menu items featuring plenty of chopped green onions is thanks to having this machine.
